- Tapioca Starch Tapioca starch is a refined carbohydrate extracted from cassava root, consisting almost entirely of starch (predominantly amylopectin with a smaller amylose fraction) with minimal fiber or micronutrients. It is rapidly digested and has a high glycemic index.
